oatmeal coconut raisin cookie recipe

  • 1/2 cup softened Butter
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 1 tsp Pure Vanilla Extract
  • 1 Egg
  • 1 cup Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • A pinch of Salt
  • 1 1/2 cups Rolled Oats
  • 1/2 cup Unsweetened Shredded Coconut
  • 1/2 cup Raisins

  1. Preheat oven to 350
  2. Line your baking sheet with parchment paper or grease pan
  3. Combine: flour, baking powder, baking soda and salt and set aside
  4. Cream: butter, sugar, brown sugar, vanilla, and the egg with a stand mixer
  5. Slowly add the aforementioned dry ingredients that you had mixed and set aside. *Don’t over mix as this can result in tough cookies!
  6. Stir in the rolled oats, shredded coconut and raisins
  7. Make your 20-25 cookies. *They will spread out quite a bit!
  8. Bake at 350 for 11-13 minutes (on center rack) or until golden brown

Update: I honestly couldn’t get enough of these cookies and had to make another batch in the same week! This time I swapped out the raisins for a mix of mini milk chocolate and white chocolate chips and now the cookies are even more addictive!
