I’ve been working on this recipe for a few weeks now, making sure I share the version with you that made the tastiest oatmeal cookies with the best texture! Just the right mix of crispy and chewy and not too sweet these cookies are quite the treat.

Ingredients
- 1/2 cup softened Butter
- 1/2 cup Sugar
- 1/2 cup Brown Sugar
- 1 tsp Pure Vanilla Extract
- 1 Egg
- 1 cup Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- A pinch of Salt
- 1 1/2 cups Rolled Oats
- 1/2 cup Unsweetened Shredded Coconut
- 1/2 cup Raisins
Directions
- Preheat oven to 350
- Line your baking sheet with parchment paper or grease pan
- Combine: flour, baking powder, baking soda and salt and set aside
- Cream: butter, sugar, brown sugar, vanilla, and the egg with a stand mixer
- Slowly add the aforementioned dry ingredients that you had mixed and set aside. *Don’t over mix as this can result in tough cookies!
- Stir in the rolled oats, shredded coconut and raisins
- Make your 20-25 cookies. *They will spread out quite a bit!
- Bake at 350 for 11-13 minutes (on center rack) or until golden brown

Update: I honestly couldn’t get enough of these cookies and had to make another batch in the same week! This time I swapped out the raisins for a mix of mini milk chocolate and white chocolate chips and now the cookies are even more addictive!
