Double Chocolate Protein Zucchini Loaf

The magic ingredient, zucchini, makes this loaf extra moist! It’s decadent and rich with almost a brownie like consistency and sweet enough despite only having 1/2 cup of sugar.

The espresso powder really brings out the chocolate flavour and the white chocolate chips on top are the perfect finishing touch.

I’ve included two recipe variations one with added protein and one for a regular double chocolate zucchini loaf. Both taste great! Recipe makes 10 servings.

Ingredients With Added Protein

  • 2 cups shredded Zucchini
  • 2 eggs
  • 1/4 cup Avocado Oil
  • 1/2 cup Milk
  • 1/2 cup Greek Yogurt
  • 1/4 cup Sugar
  • 1/4 cup Brown Sugar
  • 2 tsp Vanilla
  • 1 tsp Espresso Powder
  • 3/4 cup Cocoa Powder
  • 1 1/4 Cups Flour
  • 2 scoops Whey Protein
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 cup White Chocolate Chips
  • 1/4 cup Mini Hershey Kisses Chocolate Chips

Ingredients Without Added Protein

  • 2 cups shredded Zucchini
  • 2 eggs
  • 1/4 cup Avocado Oil
  • 1/2 cup Milk
  • 1/4 cup Sour Cream
  • 1/4 cup Greek Yogurt
  • 1/4 cup Sugar
  • 1/4 cup Brown Sugar
  • 2 tsp Vanilla
  • 1 tsp Espresso Powder
  • 3/4 cup Cocoa Powder
  • 1 1/2 Cups Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 cup White Chocolate Chips
  • 1/4 cup Mini Hershey Kisses Chocolate Chips

Directions 

  1. Preheat oven to 350
  2. Grease and flour a 9 inch Loaf Pan
  3. Combine the Dry Ingredients (except Chocolate Chips) and set aside
  4. Combine the Wet Ingredients (except for the Zucchini) and whisk well
  5. Slowly add the dry ingredients and continue to whisk
  6. Fold in the Zuchinni and Chocolate Chips
  7. Add batter to loaf pan and top with additional Chocolate Chips if desired
  8. Bake for 55-60 minutes

    Um, Y U M! I’m getting into ‘sneaking’ vegetables into baking and this sounds like the perfect opportunity to give it a go. I do have a question though: my stomach gets weird on normal flours, so would I be able to swap this to almond or oatmeal and get the same(ish) result?

    1. Hey, the texture would definitely be different but I think it could be close with oatmeal flour. Maybe you could use 1/2 cup less zuchinni so it doesn’t end up mushy.

Anyway, I’m not vegan but make as many recipes as I can and reduce my meat / other intake quite a bit. I also make these and sometimes add chocolate to the top. My kids love it and everyone else I introduce them to!
