Epic Fudgy Sweet Potato Brownies

These rich chocolate brownies with dense fudgy middles have a secret ingredient, sweet potato! Their decadent smoothness made me fall in love with homemade brownies all over again. Sweet Potato Brownies are very simple to make and even easier to eat. I was enjoying a piece with my morning coffee and Elowyn ended up stealing almost half, one tiny piece at a time!

Ingredients

  • 1 ½ cups Sweet Potato Puree
  • 1 cup Butter
  • 3 Eggs
  • ½ cup Maple Syrup
  • 6 Tbsp Cocoa Powder
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • 1 ½ cups Brown Rice Flour
  • ½ cup Dark Chocolate Chips

Directions

  1. Preheat oven to 350 degrees
  2. Boil cubed Sweet Potato for 20 minutes or until a fork goes through the cubes easily
  3. Mash cooked Sweet Potato with Butter
  4. Add the remaining wet ingredients (Maple Syrup, Eggs) and whisk
  5. Add the dry ingredients (Cocoa Powder, Baking Soda, Salt, Brown Rice Flour) and fold the batter
  6. Transfer the batter into an oiled brownie pan
  7. Bake for 40 minutes or until a toothpick comes out relatively clean (some brownie particles sticking to the toothpick is okay)

    This is surprising. As I don’t have access to Brown rice flour, do yo think I could use white rice or normal flour?
