Grilled Pork Chops with Tipsy Tequila Mango Sauce

I watched the cooking channel a lot as a child, and knowing that my mom’s favourite cut of meat was pork chops, I was thrilled to discover a mango sauce recipe I knew she would love. She liked pineapples more than any other fruit and mangoes were similar I reasoned. It was a simple recipe consisting of mangoes, sugar, and brandy. My seven year old self was able to pull it off without a hitch! It quickly became a hit in our house-hold and sometimes my mom would even make it for me for lunch. Even though the recipe has evolved over the years, any variation of mango sauce on pork-chops will always remind me of my childhood.

Ingredients:

  • 4 Pork Chops
  • 2 diced Mangoes
  • 1/4 cup of Tequila
  • 2 Tbsp minced Cilantro
  • 1 tsp grated Lemon Grass
  • Juice from half a Lime
  • 1 diced Sweet Onion
  • 2 Tbsp Avocado Oil

Directions:

  1. Lightly season the pork chops (salt, pepper, oregano) and grill for 12mins, rotate and grill for another 6-8 mins or until the internal temperature reaches 160F
  2. For the Sauce: Heat the avocado oil in a frying pan on medium heat then add the onions and cook for 5mins
  3. Add the mangoes, cilantro, lemon grass, and lime juice and sauté on medium-low heat until the mangoes start to soften and the liquid reduces
  4. Add the tequila and reduce once more on low heat
  5. Purée half of the sauce and keep the rest as a garnish
