I watched the cooking channel a lot as a child, and knowing that my mom’s favourite cut of meat was pork chops, I was thrilled to discover a mango sauce recipe I knew she would love. She liked pineapples more than any other fruit and mangoes were similar I reasoned. It was a simple recipe consisting of mangoes, sugar, and brandy. My seven year old self was able to pull it off without a hitch! It quickly became a hit in our house-hold and sometimes my mom would even make it for me for lunch. Even though the recipe has evolved over the years, any variation of mango sauce on pork-chops will always remind me of my childhood.
Ingredients:
- 4 Pork Chops
- 2 diced Mangoes
- 1/4 cup of Tequila
- 2 Tbsp minced Cilantro
- 1 tsp grated Lemon Grass
- Juice from half a Lime
- 1 diced Sweet Onion
- 2 Tbsp Avocado Oil
Directions:
- Lightly season the pork chops (salt, pepper, oregano) and grill for 12mins, rotate and grill for another 6-8 mins or until the internal temperature reaches 160F
- For the Sauce: Heat the avocado oil in a frying pan on medium heat then add the onions and cook for 5mins
- Add the mangoes, cilantro, lemon grass, and lime juice and sauté on medium-low heat until the mangoes start to soften and the liquid reduces
- Add the tequila and reduce once more on low heat
- Purée half of the sauce and keep the rest as a garnish
